• SCOPE: This specification covers the model AP20BCF200-3 HURRiCHiLLTMBlast Chiller/Shock Freezer. This unit consists of a chilling cabinet completewith all required controls and accessories. Several options are also available.
• GENERAL: The cabinet is sized to accomodate one mobile pan rack (notincluded) to hold 12” x 20“ x 2 1/2” deep food pans or 18“ x 26” sheet pans(pans not included). Maximum rack size is 26“ x 32” x 71.5“.
• PERFORMANCE: Blast chilling (soft or hard) lowers the food core temperature from 160°F to 38°F within 90 minutes. Shock freezing lowers the foodcore temperature from 160°F to 0°F within 4 hours. Thawing raises the foodcore temperature from 0°F to 38°F within 7 hours. Program times will varysomewhat, depending on the food quantity, initial temperature, density,moisture content, specific heat, and type of container. The airflow has a highvelocity, indirect pattern designed to cool all levels at identical rates.Time/temperature chilling and freezing rates meet or exceed all FDA, NSFand state regulations.
• CONSTRUCTION: The chilling/freezing cabinet is constructed of polishedtype 304 stainless steel, with 2-3/4” of CFC-free, high density polyurethaneinsulation. The interior bottom corners are fully rounded. The door isequipped with a removable magnetic gasket. The door is hinged onoperator’s left. All motors are sealed ball bearing wash-down type. A 6’ longfour wire cord set with a NEMA L15-20P plug is provided.
• REFRIGERATION SYSTEM: The self-contained refrigeration system includesa condensing unit using R-404A refrigerant and a coated evaporator coil.The evaporator temperature range is +25°F to -40°F. The compressor is asemi-hermetic type with inherent overload protection.
• TOUCH SCREEN CONTROL SYSTEM: The control system features a 7”glove-safe capacitive touchscreen that can be easily observed from acrossthe kitchen. The user friendly interface allows easy and quick access to all thechilling or freezing cycles, auxiliary cycles, and settings. A Quick Start buttonoffers the convenience of starting any chilling or freezing cycle with onetouch.
