- GENERAL: This specification covers the model AP20BC-1Twhich is sized for two mobile racks (not included) with maximum dimensions of 26”W x 32”D x 73.5”H. See chart onreverse side for production capacity. One core temperatureprobe is provided for accurate control of temperaturewithin the product.
- PERFORMANCE: Blast chilling (soft or hard) lowers thefood core temperature from 160°F to 38°F within 90minutes. Chilling times will vary somewhat, depending onthe food quantity, initial temperature, density, moisturecontent, specific heat, and type of container. The airflowhas a high velocity, indirect pattern designed to cool alllevels at identical rates. Time/temperature chilling ratesmeet or exceed all FDA, NSF, and state regulations.
- CONSTRUCTION: The chilling cabinet is constructed ofpolished type 304 stainless steel, with 4” of CFC-free, highdensity polyurethane insulation. The interior corners arefully rounded. The door is equipped with a removable magnetic gasket. All motors are sealed ball bearing wash-downtype. The cabinet floor is a 7/8“ thick insulated panel withNSF cove and is provided with an integral 2” long ramp tofacilitate access. A minimum 15” clear space required abovethe cabinet for service. Provide 12” clearance on the hingeside of the cabinet to allow for door opening.
- ASSEMBLY: Unit manufactured using insulated panels andcamlock style assembly allowing for easy ingress throughstandard building door openings.
- REFRIGERATION SYSTEM: The cabinet refrigerationsystem is complete with all components, including controls,coated evaporator coil and blower system. The evaporatoris of the forced convection type and designed specificallyfor blast chilling operation. Air circulation motors, multi-finand tube type coils, and fan guards are contained within thecabinet. Access to the evaporator for cleaning shall be viaa convenient hinged, swing-out ventilator panel. Fanmotors have inherent overload protection and the fanblades are guarded to prevent injury.
- TOUCH SCREEN CONTROL SYSTEM: The controlsystem features a 7” glove-safe capacitive touchscreenthat can be easily observed from across the kitchen. Theuser friendly interface allows easy and quick access to allthe chilling or freezing cycles, auxiliary cycles, andsettings. A Quick Start button offers the convenience ofstarting any chilling or freezing cycle with one touch.
